Roasted Beets [AIP | Paleo | Whole30 | GF | DF]

I've been on kind of a beet binge lately and I can't seem to get enough! Have you ever tried beets? There are so many ways to prepare them! Roasted like this, sautéed, in a salad..


You can buy golden beets, red beets, or both! I like to get both for variety of nutrients, flavour, and colour! Plus they look so pretty mixed together.


If your beets have greens on them, but you aren't planning on cooking your beets for a couple days, make sure you cook them first! They tend to wilt pretty quickly in the refrigerator. You can sauté them just like you would any other greens, and they're great with garlic and mushrooms.

When you're ready to roast your beets, there's minimal prep work that needs to be done. Yay! I'd recommend wearing cooking gloves for this part, otherwise you'll end up with stained fingers! I always rinse them off before peeling them, then chop them into ~1/2" thick pieces.

Toss them into your roasting pan, add the olive or coconut oil and spices (you may want to add more if you have larger beets), then mix with a gloved hand. They will need about 40 minutes in the oven, depending on how big your beets are. When there is about 5-10 minutes left, gently stir them to get even browning. They should be fork tender when they're done.


Roasted Beets

Servings: 4-6

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes


Cooking Materials:

Cooking gloves

Roasting pan

Vegetable peeler


Ingredients (organic, non-gmo):

2 bunches of beets (3 medium beets per bunch; 1 red, 1 gold)

2 tbsp olive or coconut oil

1 tsp garlic powder

1 tsp onion powder

Salt to taste (I use ~1 tsp of pink himalayan garlic salt)


Instructions:

1. Preheat the oven to 375˚F

2. Prep the beets: remove the greens (save them to eat!), wash, and peel them. Then chop into ~1/2" pieces.

3. Add beets, olive oils, garlic, onion and salt to roasting pan. Mix together.

4. The beets will take about 40 minutes. Stir with 5-10 minutes left. They will be fork tender when done.
